The house that won Greece's first Michelin star, back in 2002, and has kept French technique at the reference point of Athenian fine dining ever since, from a neoclassical building in Pangrati.

A neoclassical in Pangrati

Founded in 1996 by the restaurateur Apostolos Trastelis, Spondi keeps to a restored neoclassical building in Pangrati, a quiet residential quarter east of the Athens centre, away from the noise of the tourist grid. The main dining room sits under a low vaulted brick ceiling, stone underfoot and the light kept deliberately dim. In summer the tables move out to a walled courtyard hung with greenery, a red neon line drawn across the old stone.

It won Greece's first Michelin star in 2002 and has held one every year since, one of the longest unbroken runs in the country. The address has trained a generation of Athenian cooks, several of whom now run kitchens of their own across the city. That lineage, more than any single dish, is what a meal here buys.

II The cooking

French method, Greek produce

The kitchen works in the classical French tradition, technique-first and sauce-driven, applied to the best Greek produce of the day. It stays closer to refinement than to spectacle: precise, plated with restraint, built to be eaten rather than photographed.

It runs as a tasting menu or a la carte, with a cellar deep in French and Greek labels. Service is formal without being stiff, the kind that reads a table and adjusts to it. This is a room for the long dinner, not the quick look.

The reading

Athens has newer, louder rooms, and several very good ones. Few carry this much discipline, or this long a record of getting the fundamentals exactly right. Spondi is the table the others are measured against.
