A Bib Gourmand bistro off Cours Julien in Marseille, set in a spruced-up old bar near the top of the hill, where a French-British pair trained at Frenchie cook bold Mediterranean food that leans Spanish, at a price the guide still calls fair.
Mediterranean, market-led, with a clear pull towards Spain. The kitchen works what the morning market and the season give up, and the plates come out bold and direct rather than pretty. Starters carry the room: a skate wing terrine under a pepper sauce, aubergine with smoked yoghurt, caponata, plum and sumac flower. A squid-ink rice with grilled octopus and aioli is the dish regulars order without reading the card. The pair who cook trained at Frenchie in Paris and London, and that grounding shows in the precision under the swagger. The setting is a reworked old Marseille bar, white and bottle-green walls over exposed stone, with a terrace on the square near the top of Cours Julien. Dinner only, two sittings through summer, a dozen tables that book out well ahead.
It is a Bib Gourmand in the Michelin Guide France 2026, newly listed, the guide's mark for good cooking kept to a fair price. That is the case VANE likes to make: serious kitchen discipline does not have to arrive with a tasting-menu bill. The pair carried the method of Frenchie down to a neighbourhood bar on Cours Julien and cook at a level the hill has not usually held. Marseille sits at the top of the French table as well, with Alexandre Mazzia at three stars and Passédat on the water, and a Bib like Prosper shows the city's range runs the whole way down. A researched profile, drawn from the restaurant's own record and Michelin's listing, not a first-hand VANE visit.
