A two-star dining room on the top floor of Iniala Harbour House in Valletta, looking out over the Grand Harbour, where Simon Rogan has carried his farm-to-table cooking from the Lake District and rebuilt it around Maltese produce.
Farm-to-table in the strict sense. Simon Rogan built his reputation at L'Enclume in the Lake District on cooking what grows nearby, and in Valletta he has rebuilt the idea around the Maltese islands: produce grown, reared, foraged or caught locally wherever the kitchen can manage it. The format is a tasting menu that shifts with what the island gives up through the season. Rogan is the chef patron and sets the direction, and the Valletta-born chef Christian Cali runs the pass day to day. The dining room sits on the top floor with the Grand Harbour below, and service is precise without being formal.
It holds two Michelin stars in the Guide Malta 2026, the only restaurant on the islands at that level and the third year running it has held the distinction. An imported name can sit uneasily in VANE, but this one earns its place. Rather than fly in a London menu, Rogan has tied the kitchen to Maltese farmers and fishermen, so the food belongs to where it is served. Set on the bastions above the Grand Harbour, in a city built by the Knights, it is the table that proves Malta can hold its own at the top level.
