A one-star dining room on the top floor of The Xara Palace, a 17th-century palazzo set into the bastions of Mdina, Malta's old walled capital, where the kitchen cooks the island's produce with a light modern hand.
Mediterranean cooking with a few French accents, built on seasonal island produce, much of it grown in the Xara Gardens below. Executive chef Clint Grech and head chef Gabriel Caruana keep the plates precise and let the ingredient lead, rather than dressing it up.
It is the island's benchmark table, holding a star since Malta's first Michelin guide in 2020 and keeping it in the 2026 edition, in a setting most capitals cannot match: a room on the walls of a medieval city with the whole of Malta below.
