A one-star dining room in the northern Athens suburb of Chalandri, set in a converted schoolhouse with an open kitchen, where the Corfu-born chef Ettore Botrini cooks a personal Greek and Italian menu that runs between the Ionian and Tuscany.
The cooking crosses two home cuisines. Botrini grew up in Corfu to a Greek and Italian family, trained in Monaco and France, then spent time alongside Martín Berasategui in Spain, and the menu carries that double inheritance: Greek produce read through Italian method, a line drawn between the Ionian and Tuscany. The format is built to open the door wider than most kitchens at this level. Two tasting menus run alongside a shorter, more affordable route that mixes the signature plates with simpler ones, so the room is not held back for an expense account. The setting is a converted schoolhouse in Chalandri, with an open kitchen and a chef's table that keep the cooking in plain sight. Ilias Ntoukas works the pass beside him, and service is attentive without ceremony.
It holds one Michelin star in the Michelin Guide Greece 2026, retained when the guide held its first selection to take in Santorini and Thessaloniki alongside Athens. What earns the place for VANE is how honest the cooking is about where it comes from: Botrini works his own crossed Greek and Italian heritage rather than borrowing a Paris or Nordic script, from a residential suburb rather than a hotel tower, and keeps the bar within reach of an ordinary Athenian evening. A researched profile, drawn from the restaurant's own record and Michelin's listing, not a first-hand VANE visit.
