A two-star dining room in Chiado, in a historic room José Avillez took over in 2012 and turned into Portugal's benchmark table. The cooking reworks Portuguese memory and tradition through modern technique, across a single long tasting menu.
Creative Portuguese, built on the country's own memory. José Avillez reaches back to dishes and ingredients from across Portugal, then reworks them with modern technique rather than leaving them as they were. Alongside a modern a la carte, the kitchen offers a single long tasting menu named Belcanto that moves through his reading of the national table. Produce drives the plate, and the techniques stay in service of flavour rather than display. Service is formal without being stiff, in a small room that seats few covers a night, which keeps the kitchen close to each plate.
It holds two Michelin stars in the Guide Portugal 2026 and sits at number 42 on the World's 50 Best list, which puts it among the handful of tables that define where Portuguese cooking stands now. Avillez owns it, and the food reads as his argument for his own country's kitchen rather than an imported style borrowed from Paris or Copenhagen. That matters to VANE. It is also a restoration: a historic Chiado dining room brought back and given a reason to exist again, in the quarter Lisbon treats as its cultural heart. Avillez has since built other rooms around it, but this is the one that carries the weight of his name.
